Sodium diacetate (SDA), a molecular compound of sodium acetate and acetic acid, is also known as monosodium diacetate or solid acetic acid in Japan. It presents as a white crystalline powder, hygroscopic with a faint acetic acid odor, and is flammable. Highly soluble in water and ethanol, it exhibits very low toxicity, with an oral LD50 of 3.31 g/kg for mice and 4.96 g/kg for rats, and an acceptable daily intake (ADI) of 0–15 mg/kg. Its final metabolites in organisms are water and CO₂, ensuring no residual accumulation or harmful effects on humans, animals, or the environment. Classified as an "O" toxic substance by the World Health Organization (WHO), it is recognized as safe, non-toxic, non-carcinogenic, and non-teratogenic.
