Ammonium ferric citrate is an industrial-grade product with a purity of ≥ 99%. It is a brownish-red amorphous powder, odorless, and has a slightly ferrous taste. The melting point causes decomposition upon heating, and the boiling point leads to further decomposition. The vapor pressure is negligible at 25°C, with a relative density of 1.80 at 20°C. It is highly soluble in water but insoluble in ethanol, ether, and chloroform. In China, it is approved for use in various food products with the following guidelines: for salt and sandwich sugar, the recommended usage is 4000–8000 mg/kg; for high-iron cereals and their products (with a daily limit of 50 g), 1200–1350 mg/kg; for dairy and infant food, 400 to 800 mg/kg; for cereals and their products, 160 to 330 mg/kg; and for beverages, 70 to 140 mg/kg.
