Ammonium ferric citrate is an industrial-grade product with a purity of ≥ 99%. It is a brownish-red amorphous powder, odorless, and has a slightly ferrous taste. The melting point causes decomposition upon heating, and the boiling point leads to further decomposition. The vapor pressure is negligible at 25°C, with a relative density of 1.80 at 20°C. It is highly soluble in water but insoluble in ethanol, ether, and chloroform. The product is stable under normal conditions, although it is incompatible with strong acids, strong oxidizing agents, and reducing agents.

In China, it is approved for use in various food products with the following guidelines: for salt and sandwich sugar, the recommended usage is 4000–8000 mg/kg; for high-iron cereals and their products (with a daily limit of 50 g), 1200–1350 mg/kg; for dairy and infant food, 400 to 800 mg/kg; for cereals and their products, 160 to 330 mg/kg; and for beverages, 70 to 140 mg/kg.
