It is found in the non-glyceride fraction of olive pomace oil and is widely present in foods and plants, either as a free acid or as an aglycone precursor for triterpenoid saponins, which can be linked to one or more sugar chains.
Biosynthesized from lupane, oleanolic acid can convert to its isomer ursolic acid or be oxidized to form taraxasterol and amyrin. Both oleanolic acid and its derivatives exhibit several promising pharmacological activities, including hepatoprotective effects, as well as anti-inflammatory, antioxidant, and anticancer properties.
