Calcium lactate is a black or white crystalline salt produced by the reaction of lactic acid with calcium carbonate or calcium hydroxide. It is commonly used in foods, such as an ingredient in baking powder, and also has medicinal applications. Its E number is E327.

This compound is frequently found in aged cheeses, where small crystals form as lactic acid is converted into a less soluble form by bacteria during the ripening process. Medically, calcium lactate is primarily used as an antacid and to treat calcium deficiencies. It is readily absorbed at various pH levels and does not require food for effective absorption.

Calcium lactate is also added to sugar-free foods to help prevent tooth decay. When included in xylitol-containing chewing gum, it enhances the remineralization of tooth enamel. Product Application of Calcium Lactate CAS No. 814-80-2

Calcium lactate is the calcium salt of lactic acid and is water-soluble, with a solubility of 3.4 g/100 g in water at 20 °C and much higher solubility in hot water. It is available in monohydrate, trihydrate, and pentahydrate forms, with the trihydrate and pentahydrate dissolving at 9 g/100 mL in water at 25 °C. It contains approximately 14% calcium.

In food applications, calcium lactate is used to stabilize and improve the texture of canned fruits and vegetables by converting labile pectin into less soluble calcium pectate, preventing structural collapse during cooking. It is also added to angel food cake, whipped toppings, and meringues to enhance protein extensibility, resulting in increased foam volume. Additionally, it is employed in calcium-fortified foods, such as infant foods, and to improve the properties of dry milk powder.
