Fumaric acid is a non-hygroscopic, strong acidulant with limited solubility in water (0.63 g per 100 ml distilled water at 25°C). While it dissolves slowly in cold water, its solubility can be enhanced by combining it with dioctyl sodium sulfosuccinate or reducing its particle size.
A key advantage of fumaric acid is its cost-effective efficiency: 0.317 kg of fumaric acid can functionally replace 0.453 kg of citric acid in formulations.
