Ethyl maltol forms white crystals with a melting point of 90–91°C and has a strong, sweet, caramel-like odor. It is 4 to 6 times more potent than maltol. Several synthetic methods have been developed for its production. In one such method, ethylfurfuryl alcohol is reacted with halogens to form 4-halo-6-hydroxy-2-ethyl-2H-pyran-3(6H)-one, which can directly undergo aqueous hydrolysis to yield ethyl maltol without the need for isolation. Ethyl maltol has a distinct, sweet, fruit-like odor with remarkable persistence and a sweet, fruity taste that initially carries a bitter-tart flavor, which fades quickly. It is significantly stronger than maltol, making it an effective flavoring agent.
