Acid Red 18 (carmine) is a food coloring approved for use in a variety of food products, including fruit juice drinks, blended alcoholic beverages, carbonated beverages, candies, cakes, ice cream, and yogurt. However, its application is restricted in dried meat, meat products, and aquatic products to prevent potential misuse by unethical parties in masking poor-quality ingredients, such as spoiled meat, and deceiving consumers.
In accordance with China's "Chemicalbook Food Additives Use Hygiene Standard" (GB2760-1996), Acid Red 18's permitted applications and maximum usage levels align with those of amaranth. Specifically, it is approved for use in candy color coatings and soy milk beverages at a maximum concentration of 0.1g/kg, and in red sausage casings at 0.025g/kg, with a residual limit of 0.01g/kg.
