Adipic acid is an odorless crystalline powder with the lowest acidity among common food acids, offering excellent buffering capacity in pH 2.5–3.0 ranges. It is nonhygroscopic, similar to succinic and fumaric acids, and imparts a smooth tartness to foods. In grape-flavored products, it enhances flavor persistence and improves texture in gelatin-containing powders. These properties make it a preferred accidulant for dry powdered food mixtures, especially those with delicate flavors where tanginess is undesirable. Its aqueous solutions exhibit minimal pH variation (less than half a unit) at concentrations of 0.5–2.4 g/100 mL, enabling effective buffering to maintain acidity within 2.5–3.0—ideal for certain foods while inhibiting fruit browning.

Adipic acid serves as a stable, nonhygroscopic acidulant and flavoring agent, with slight water solubility (1.9 g/100 mL at 20°C) and a pH of 2.86 at 0.6% usage level (25°C). It is widely used in powdered drinks, beverages, gelatin desserts, lozenges, and canned vegetables. Additionally, it functions as a leavening acidulant in baking powder and as a buffering agent to maintain acidity within pH 2.5–3.0. Its applications extend to edible oils, where it helps prevent rancidity.
